Knives are a very personal item.  There are different weights, grips, metals and balance when it comes to a knife; each knife is going to feel different to every person.  It is important to have a knife that is going to feel comfortable to you, the person who is actually using the knife, an out of balance knife is not going to be comfortable to use.

Grip, balance, blade strength and sharpness... all are important things when purchasing a knife.  You may not be able to spend hundreds of dollars on knives, but with a little research you can have a good knife for a reasonable price.  Keeping a blade sharp will of course give you best performance but you must sharpen your knife correctly.

A dull knife can be more dangerous than a sharp one. If a knife is dull, you will use more pressure and try to force the blade. This often results in slippage and cuts. Proper knife care, hand wash your knives in mild, soapy water and towel dried, no matter how tempting, don't put your knives in the dishwasher, the detergents could very well pit your blades and staining.  Bleaching and soaking should be kept to a minimum as well to keep the handles from fading and splitting.
